One of our favourite year-round meals is Mama’s Creole Gumbo, our take on one of the most well-known, traditional Louisiana dishes. This flavourful one-pot stew paired with some tasty sides is perfect for serving indoors or out and is sure to satisfy an appreciative crowd.
What is Gumbo & where did it originate?
Creole Gumbo is a thick stew (or hearty soup) known for its use of herbs and spices, such as cayenne pepper, paprika, and oregano and ingredients like okra, andouille sausage (smoked pork sausage), crabmeat and shrimp or prawns.
This popular Southern dish is thought by food historians to have originated in Louisiana in the early 18th century and has a rich & diverse cultural history that includes African, French, European, Native American, and Caribbean influences.
Traditionally, okra would have been used as a thickening agent in Gumbo. The word Gumbo actually comes from the West African word “ki ngombo” for “okra”.

You can add seafood, chicken or sausage (or a combination of all 3) to your Gumbo or choose to make the meal Vegan or Vegetarian- friendly by skipping the meat & seafood and loading it up with cauliflower, mushrooms, tomatoes, onion, bell peppers and celery.
Interesting Fact: ‘The Holy Trinity’ in Creole & Cajun cuisine refers to the flavourful recipe base that consists of onion, bell peppers and celery.
Make It A Feast Fit For Family & Friends
Gumbo is most often served with white rice, and you’ll notice that we’ve already added rice to the mix, but that doesn’t mean you can’t have an extra side available for those who like a little bit more.
If you’ve got a big crowd coming over, here are a few more tasty sides dishes to tempt the tastebuds:

Mama's Creole Gumbo
8-10 X 2 cups
If you love Southern cooking as much as we do, you’ll love this Creole-inspired stew. Authentic creole spice gives this thick dish a kick—and it masks the taste of nutritious greens (for the pickier eaters in your family—not limited to kids!). Load it up with chicken, sausage or seafood (or all three!)
1 package Mama’s Creole Gumbo Mix
1 lb chicken, sausage or bacon
1 onion, diced
2 ½ cups shrimp or prawns
28 oz can diced tomatoes
3 tbsp butter
2 green, yellow, orange or red peppers
1 cup greens (okra, swiss chard, kale or spinach)
In large pot, brown 1 lb of ONE of the following meats: chicken, sausage or bacon with one chopped onion.
Add 7-8 C water and package contents; boil for 15 min, then simmer covered for approx 70 min (add extra water if needed).
Add 2-3 C shrimp or prawns, 796 ml can diced tomatoes, 3 tbsp butter, 2 diced peppers, 1 C diced greens (option: add okra, Swiss chard, or spinach).
Cook until veggies are soft and shrimp is cooked (gumbo should be very thick). Season with salt and pepper.
TIP: For softer beans and faster cook time soak top portion of beans for 4-6 hr.
Vegan/Vegetarian Friendly Version
Sub meat and/or seafood with one or more of the following: vegan chicken, sausage or bacon, cauliflower, chopped portobello mushroom, celery
